Excellion® EM 9 is a roller dried milk protein type fresh curd calcium caseinate, prepared from fresh skimmed milk. Excellion® EM 9 is used in a wide range of food products like high protein bars, nutritional beverages, processed and analogue cheese and a range of processed meat and poultry products. Excellion® EM9 is widely used in meat products to improve firmness, sliceability and yield. In nutritional applications, it is used as emulsifier/stabilizer, structure improver and as an excellent protein source. For high protein bars, Excellion® EM 9 is an excellent protein source which helps reducing stickiness and improving mouthfeel. The product is rich in casein protein (92.4%) and calcium (1.2%) and only contains 0.25% of lactose which makes it easy to formulate lactose free or low lactose high protein products (depending on local legislation). In processed and analogue cheese, Excellion® EM 9 acts as emulsifier and structure builder while enabling good cheese re-melting behavior.
