Excellion® EM 6 is a roller dried milk protein, prepared from fresh skimmed milk. Excellion® EM 6 is used in a wide range of food products like meat and poultry products (sausage and hams), emulsified sauces, processed cheese and spray dried emulsions. Excellion® EM 6 has excellent emulsifying and stabilizing properties and shows superb solubility and heat stability. It is insensitive to salt and can be easily dispersed and dissolved in brines. In meat processing, Excellion® EM 6 can be added either dry, as a concentrated solution or as a pre-emulsion. Compared to sodium caseinate type Excellion® EM 7, Excellion® EM 6 has improved dispersibility and reduced dust formation.
