Description

Panamore® Golden is a kosher and halal certified enzyme preparation for food use containing lipase derived from Aspergillus sp. Standardised activity: 2750 DLU/g +/- 5 %. It is a lipase for DATEM replacement. Improves dough tolerance, baking performance, volume, crust opening and overall appearance in baking applications: bread, flour, tortillas, flat bread, pizza, and steam buns. Typical dosage: 10-20 ppm. Also suitable for vegans and vegetarians.
